Pea and Green Apple Soup

Reel Chow Original Recipe!In the aftermath of Hurricane Sandy, I’m finally able to cook and share this post with you. If there’s one thing I’ve learned in the past week, it’s that family really matters, and everything family-related is better when you’ve got the ones you love in your kitchen, sharing warm food made with care and good feelings.

My pea soup is made with mostly fresh ingredients, minus the choice of bacon. I used bacon to cook my onions with to give this soup some extra flavor. The green apple was used to give it a bite of fruitiness without making it terribly sweet. The combination may sound crazy, but as we watched the cleanup of the hurricane, the people I care about most were enjoying this wonderful original recipe with me. I hope you like this unique flavor combination, too.

Ginger Brown Rice

Reel Chow Original Recipe!Ginger Brown Rice is a tasty way to jazz up any plain pot of rice. It goes with fish, chicken, and certain beef dishes. I made brown rice the usual way, then added minced ginger with it’s natural juices by using a garlic press to crush it. I used organic, low sodium vegetable broth and water to cook the rice. The broth adds a nice flavor to it and doesn’t take away from the ginger.

This is a flavorful and very healthy dish, perfect for the colder weather now visiting us in the Northeast.

Quinoa Pasta with Kale and Roasted Tomatoes

Reel Chow Original Recipe!I had a leftover red onion and two tomatoes from the guacamole I made on Sunday, and I decided to incorporate them in last night’s dinner. I wanted to make something easy and not time-consuming so I put together a simple pasta dish.

The kale gives it some sophistication, and the quinoa pasta helps this dish not be some typical pasta retread. It’s a great summer pasta dish that’s healthy and promotes the use of seasonal vegetables. Ron really enjoyed it after a long day of work, and was looking for seconds. I call it Quinoa Pasta with Kale and Roasted Tomatoes. Give it a try and watch your family come back for more.

Corn Bisque with Pinapple Sage

On our recent trip to Baltimore, for lunch we stopped into Sotto Sopra on North Charles Street. We had no plans to dine there and were very fortunate to stumble upon it.

Ron and I were in Baltimore for the poetry at the CityLit Festival, which just happened to be right around the corner from Sotto Sopra. I was craving fish with some type of greens and Ron was happy to find a place close to the festival that would satisfy my specific cravings. For some reason, he can eat anywhere and find something on any menu, even with his “eat no mammals” mantra. On the other hand, it’s not as easy for me, which he points out often.

Vegetable Pizza with Fennel Sauce

Reel Chow Original Recipe!This recipe was inspired by my leftover fennel from the previous post, French Breakfast Radish Crostini. I decided to make a homemade pizza with fennel sauce as the base. By braising it in red wine and vegetable broth, along with a spanish onion and shallot, the flavors really popped. This is now my favorite pizza sauce. It’s perfect for healthy eaters, the lactose intolerant, and folks allergic to nightshades. Oh, yes—how good it is!

After I puréed the braised fennel, I spread it on the pizza dough with a spatula. I topped it with fresh, thin slices of yellow and green zucchini, spinach, eggplant and garlic. After cooking the pizza, I added fresh chopped parsley. The pizza came out delicious and colorful.

Very Oniony Onion Soup

Reel Chow Original Recipe!Don’t be afraid of the title. This onion soup is not my eye watering, kick-ass spicy version. It’s also not the traditional French onion soup loaded with melted cheese and carbs. I consider this a healthy alternative to a classic French onion soup, primarily because it omits the dairy.

As a child, my first experience with onion soup was that of fright. On a sunny Saturday in California, my mom was busy in the kitchen and my father was home ill with pneumonia. Somewhere—either on television or in the book of home remedies—my mom got the idea to make no-cook onion soup so my father could sweat out the pneumonia, ultimately killing the infection. In hind sight, the idea seemed great. It was the execution that almost killed my father by eating potent raw onions.
