Father’s Day with the In-Laws

This past weekend Ron, myself, and our Puggle puppy Bijou took a trip to visit my in-laws in Pennsylvania for Father’s Day. It was a weekend filled with great weather and plenty of food. On the way down from New York, we took the longer route instead of jumping on the New Jersey Turnpike which is more like a parking lot on a Friday evening. As we were heading south, we drove through a cute town named Lahaska, Pennsylvania. I asked Ron if we could stop off along our way home to check out some of the eateries and shops and take a leisure Sunday, which he gladly agreed to.

Before dinner, we sat out on the deck, which has such serene views. We ate wild jumbo shrimp my mother-in-law boiled for shrimp cocktail, and we were able to wash it down with chilled Cava while watching little Bijou run around and play.

My mother-in-law had a huge dinner planned for Saturday. The menu was wild salmon (Copper River), roasted asparagus, braised brussel sprouts, sweet corn and fresh green salad. The dessert was fresh berries marinated in Amaretto, and topped with whipped cream.

The seafood and the fresh vegetables were so easy to prepare. The only dish I contributed to was the braised Brussel sprouts with sliced onion. Ron raves about my Brussel sprouts, and says they’re the only ones he’s had which aren’t bitter.

We had a great time spending Father’s Day with the in-laws in Pennsylvania. It was a short trip but we definitely made the most of it. Stay tuned for Wednesday’s post about Lahaska, with all the cute shops and my favorite new culinary shopping spot, Cookery Ware Shop!
